The Italian-Argentine culinary trailblazer is partnering with the late-2022-opening Raffles London at The OWO to create two signature restaurants and a chef’s table.

Chef Mauro Colagreco plans to cook up a storm at one of the year’s most-anticipated hotel openings.

An exciting culinary partnership

Raffles London at The OWO, Hinduja Group and Onex Holding have jointly announced Colagreco as the very first chef partnership for the forthcoming property, which is currently taking shape within a landmark historic building in Whitehall. The chef will create a brasserie with a twist, a fine-dining restaurant and an avant-garde chef’s table.

Colagreco is the celebrated chef behind the three-Michelin-starred temple of gastronomy Mirazur on the French Riviera, which topped the World’s 50 Best Restaurants list before joining the Best of the Best category in 2021.

“Chef Mauro is undoubtedly one of the world’s most-recognised chefs and our partnership reaffirms London as a preeminent global dining destination,” said Stephen Alden, CEO of Raffles & Orient Express. “Mauro has a phenomenal reputation and we’re excited to see him bring his experience to Raffles London with concepts that are tailormade for our well-travelled guests.”

Sanjay Hinduja of Hinduja Group added: “We are thrilled to be working with a chef who is so in tune with our own ambitions and to have such an acclaimed talent establish Raffles London at The OWO as a new and exciting culinary destination for London.”

Multisensory dining experiences

Overall, the new hotel is to feature 11 destination restaurants and bars. Colagreco will help set this culinary offering apart by curating multisensory dining experiences within the building’s storied rooms, and his dishes will also be available for in-room dining, events and residents of The OWO Residences by Raffles.

Colagreco said: “The incredible location, combined with the professionalism of the Raffles London team, convinced me that this was the ideal time and place to launch for the first time in London with concepts that will be tailormade for Raffles.”

The chef’s cuisine is known for sensitively balancing flavours that, through simplicity, allow each ingredient to shine. At Raffles‘ new outpost, guests can expect to go on a culinary journey through the seasons, with ingredients procured locally and with sustainability in mind.

These new restaurants will highlight the UK’s best organic produce sourced each day from farms, fields and the shore.
